Valentine’s Weekend

Some friends came to stay from New York for Valentine’s weekend. They arrived really late on Friday, and by the time I woke up on Saturday (7am- really late for me!) the first snowflakes had started to fall.
After a breakfast of bagels and cream cheese we bundled up and headed out into the woods for a skiing adventure. We followed a snowshoe trail for the first part, but then had to break trail for the rest of it. It was quite a sweaty workout and I was starving by the end of it.
For Valentine’s dinner, I made our favorite dish inspired by Veggie Planet, plus brownie pudding and vanilla ice cream for dessert. All of us collapsed into bed nice and early, tired by the skiing and full of delicious food.
The next morning, I woke up to find that about 14 inches of snow had accumulated overnight! Thankfully, shoveling snow goes quickly with four people and we were off on another skiing adventure. It was cold and very windy, but we ha a great time and saw some very pretty views.
We made a roast lamb leg, polenta, and broccoli for dinner and devoured most of it before finishing off the brownie pudding.
It was such a fun weekend, full of adventures, amazing food, lots of laughter, and great stories. I’m so glad I got to spend the weekend with some of my favorite people.
