I’m slightly obsessed with King Arthur Flour. They’re a great company (a B Corp and employee owned) and I love their products. I grew up using their flours and won’t bake with anything else, and their Instant ClearJel made my first attempt at a blueberry pie a success.
I love the company, but I REALLY love their recipes. Their brownie recipe is my favorite one, and their blueberry pie recipe made me eat a whole piece of pie (I like pie filling but not the crust usually). I’ve always liked getting their Sunday recipe round up email with new recipe ideas, but I was super excited when they launched their Bake-Along series at the end of the summer.
When I saw that the September entry was Inside Out Pumpkin Muffins, I knew I had to make them. If you like pumpkin desserts and cream cheese frosting, you will love these! the one problem I had with these was that some of the cream cheese frosting went through the streudel crust when baking. I don’t think I put quite enough batter on top of the cream cheese center. It didn’t hurt the taste at all though!
